Rainy Day Baking

It is a very rainy, windy day here and thankfully, we don't have anything on our schedule, so we've made it a stay-at-home day. No hurrying around to be anywhere, no rushing to get everyone into the car.

OBB and I decided some baking was in order so I helped him make cheese straws.




















The recipe is from the South Carolina Farm Bureau Magazine that I used to get when I worked on the Hill. As you can see in the picture, I made about half of the recipe (didn't need 8 dozen!) and I didn't cut them into 2-inch strips. Just kneading the dough with our hands and molding them into little round balls was much more up OBB's alley.


Cheese Straws

1/2 cup butter, softened
4 cups shredded cheddar cheese - sharp
2 cups all purpose flour
dash of red pepper
1 tsp salt

Cream butter and cheese together until smooth. Sift flour, salt and red pepper together. Add to cheese mixture and blend thoroughly by hand or by using electric mixer with dough beaters. Knead slightly. Press dough through cookie press to form 1-inch wide strips on ungreased cookie sheet. Cut strips into 2-inch wide segments. Bake at 350 for 10-15 min. or until lightly browned on top. Cool on wire racks. Yield: 8 dozen.
